August 10, 2021 Day 30!
Whelp! I had a trip to the bathroom. That is about the only thing to report today and to be honest, it's not that exciting! I skipped the beer, hot dogs, hamburgers and tasty looking ice cream cones at the baseball games we went too as well, and honestly it just hasn't been that hard which I am so grateful for! My daughters chocolate ice cream sure smelled good, but oddly enough I just am not craving anything in particular or really missing anything. I was hungry around dinner time while they ate and even a beyond burger between a GF bun sounded so tasty but also I know it just wouldn't even be worth it. So I snacked on pumpkin seeds and a Zevia soda and was totally content!
Breakfast - Eggs in a cup! (still no stove)
Lunch - A couple green olives with some left over zucchini and asparagus
Dinner/Snacks - Some popcorn (made at home not at the game) peanut butter, celery and a glass of soy milk (Please Patrick don't take my peanut butter away)
Alright more truth - I am REALLLLLY doing a bad job eating vegetables! Small portions of left over veggies here and there are probably most certainly not enough. I do get our veggie box from the farmers market in the am. Hopefully I'm encouraged to actually eat it this week! I have a late night tomorrow but some of my clients have given me some great recipe ideas, like a curry chicken in soy milk, lemon peppered chicken, and today thin slices of onion with cucumbers tossed with lemon juice/garlic/and olive oil (no vinegar since I can't have any) but those sound good and refreshing. I keep forgetting about cauliflower rice too! Nothing is super easy anyway without a stove but I'll make do! We will be out of town for the weekend so I'll have a stove this weekend and can try to figure out something to get myself eating actually food/meals. I am hopeful Patrick will have some help as well!
