Day 6
Well I am late again! Ha! I had an MRI of my back in the morning which I was happy to finally have. I have the reports back, but am curious to see what the doctor says. As far as I can tell, everything is fairly normal wear and tear. I wasn't hungry at ALL at any point in the day. I made myself scrambled eggs for breakfast that Tony had to finish because I just couldn't eat it. I had some edamame as a snack and then for dinner.......OOOOOoo So good!
I thawed some Mahi Mahi and used my air fryer for the first time. I drizzled olive oil, salt/pepper and one lemon slice and cooked it flipping once for 12 minutes. THEN...here is the mind blowing part! I saw a tip on Pinterest to add some browned butter to the fish just as it's done. Since I am not getting a ton of calories and Patrick told me to eat as much butter and seeds as I want - I indulged. And. It. Was. AMAZING! Tasted so good!
We also went to a couple homes in Salem on the tour of homes and I just overall felt pretty good (minus an achy back but that is normal - I just tweaked it extra special somehow!)
We played games and Tony had wine with my Mom outside and I even made Xavier S'Mores which the smell was hard to resist but I did. Honestly the crunchy Chex mix they were all snacking on was really tough to not eat! It just sounded crunchy and good! I settled for celery...so exciting! haha
